Chopped Challenge Peoria 2019

This was our first time at Chopped Challenge! Our friends have been getting together for years in August as a way to celebrate Anniversaries and spend time together. So happy we got it on our calendar early so we were able to attend :)

Here is a little breakdown of how we spent the day: there were 10 of us this year so we broke up into teams. Each team had to find 4 random ingredients to give another team. While you want it to be challenging you also don’t want to give them things that are too crazy because you have to eat their meal. Once you had the ingredients that were chosen for you you needed to come up with a meal idea. My team was given jalapeño popper chips, chicken, pineapple, and a broccoli and cauliflower casserole.

So we took the chips and turned them into a crust for the chicken. We made a chocolate drizzle and added some spice to it. And mixed the casserole with cream cheese and made like cheese cups of goodness. Those were my favorite from our meal. Other teams made egg rolls from Beyond meat or pizza with ginger snaps in the crust. It was cool to see how you could take some basic or plain items and turn them into something a little more exciting.

If you know Lex and I you know we don’t cook. We are trying but it tough with how much we work and not wanting to dedicate so much time to it. But it was fun to hang out with friends we don’t get to see too often and make delicious meals :)
